Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add olive oil. Sauté chopped onions and minced garlic until fragrant (3-4 minutes).
- Add ground beef; cook until browned, breaking it apart with a spatula. Drain excess fat.
- Stir in sliced zucchini and Italian seasoning; cook for an additional 5 minutes.
- Transfer the mixture to a greased baking dish, pour tomato sauce over it, and mix gently.
- In a bowl, combine panko breadcrumbs with cheddar cheese; sprinkle over the casserole.
- Bake for 25-30 minutes or until golden brown and bubbly.
