- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup orzo pasta
- 5 oz Boursin cheese (garlic & herb)
- 2 cups low-sodium chicken broth
- 2 cups fresh spinach
- 3 garlic cloves (minced)
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts and sear until golden brown, about 6-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant; add fresh spinach and cook until wilted.
- Cook orzo according to package instructions; drain and set aside.
- Pour chicken broth into the skillet with garlic and spinach; bring to a simmer. Stir in Boursin cheese until melted.
- Add cooked orzo and sliced chicken back to the skillet; toss to combine well. Finish with grated Parmesan cheese.
