- 1 cup fresh cherries, pitted
- 8 oz dark chocolate, chopped
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract

- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and pit the cherries; roast on a baking sheet for about 15 minutes until caramelized.
- In a microwave-safe bowl, melt dark chocolate and butter together, stirring until smooth.
- In another bowl, whisk sugar and eggs until frothy; mix in vanilla and melted chocolate mixture.
- Fold in flour, cocoa powder, salt, and roasted cherries until just combined.
- Pour batter into a greased pan and bake for 25-30 minutes until a toothpick inserted comes out with moist crumbs. Cool before slicing.
