Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan.
- Brown the unsalted butter over medium heat until golden and fragrant.
- In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, sour cream, vanilla bean seeds, eggs one at a time, flour, and salt until combined.
- Slowly drizzle in the warm brown butter while mixing gently.
- Pour filling over crust and bake for 50-60 minutes until set but slightly jiggly in the center.
- Allow to cool completely at room temperature, then refrigerate for at least four hours before slicing.
