- 3–4 boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- 2 tablespoons sour cream
- Fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Pat chicken breasts dry and season both sides with salt and pepper.
- In one bowl, beat eggs and mix in sour cream; in another bowl, combine panko breadcrumbs, Parmesan cheese, parsley, salt, and pepper.
- Dip each chicken breast into the egg mixture first, then coat thoroughly in the breadcrumb mixture.
- Place on a greased baking sheet and bake for 20-25 minutes until golden brown and the internal temperature reaches 165°F (74°C).
- Allow resting for a few minutes before serving.
