Instructions
- Cut the halloumi into cubes and chop the bell pepper and zucchini into similar-sized pieces.
- In a bowl, combine olive oil, lemon juice, zest, and thyme. Drizzle over the vegetables and let marinate for 15 minutes.
- Assemble skewers by alternating halloumi cubes with bell pepper and zucchini.
- Preheat grill to medium-high heat.
- Grill skewers for about 3-4 minutes per side until golden brown.
- Squeeze fresh lemon juice over the top before serving.
