- 4 salmon fillets (about 6 oz each)
- 1/4 cup raw honey
- 2 tbsp freshly squeezed lime juice
- 1/4 cup fresh cilantro, chopped
- 3 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and prepare two large sheets of aluminum foil.
- In a bowl, mix honey, lime juice, minced garlic, chopped cilantro, olive oil, salt, and pepper until combined.
- Place the salmon fillets skin-side down on one sheet of foil and pour half of the marinade over the top.
- Fold the foil over the salmon to create a sealed packet.
- Bake for 15-20 minutes until the salmon flakes easily with a fork.
- Carefully open the foil packet and serve with vegetables or over rice.
