- 4 large bell peppers (any color)
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 2 green onions, chopped
Instructions
- Preheat oven to 375°F (190°C) and prepare a baking dish with parchment paper.
- Slice the tops off the bell peppers and remove seeds. Place upright in the baking dish.
- In a bowl, mix shredded chicken with buffalo sauce and half of the cheddar cheese until well combined.
- Generously stuff each pepper with the buffalo chicken mixture and top with remaining cheese.
- Bake for 20-25 minutes until peppers are tender and cheese is bubbly.
