Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

- Toss diced sweet potatoes with olive oil, salt, and pepper until coated.
- Spread sweet potato cubes on the prepared baking sheet and roast for 25-30 minutes until golden brown.
- Grill or bake the marinated chicken for about 6-7 minutes per side until fully cooked.
- Slice the chicken and assemble the bowls by layering roasted sweet potatoes with BBQ chicken. Garnish with fresh herbs.
