- 4 large flour tortillas
- 6 eggs
- 1 cup whole milk (or almond/oat milk)
- 1 cup shredded cheddar cheese (or mozzarella)
- 1 cup diced bell peppers
- 1 medium onion, diced
- 1 cup fresh spinach (or thawed frozen spinach)
- 2 tsp olive oil
- Salt and pepper to taste
- Optional: cumin or paprika for extra flavor
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté onions and bell peppers until soft (about 5 minutes).
- In a mixing bowl, whisk together eggs, milk, salt, pepper, and any additional spices.
- Spray a baking dish with non-stick spray. Line the bottom with one tortilla, add half of the sautéed veggies and half of the cheese.
- Layer half of the spinach on top, then pour half of the egg mixture over it. Repeat these layers until all ingredients are used.
- Bake for 30-35 minutes until golden brown and set in the center.
