Instructions

- In another bowl, cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time to the butter mixture, then mix in apple cider until smooth.
- Gradually combine dry ingredients into the wet mixture without overmixing.
- Drop heaping tablespoons of batter onto prepared sheets, spacing them about 2 inches apart. Bake for 12-15 minutes until edges are golden but centers remain soft.
- Cool completely on wire racks before filling with caramel sauce between two cookie halves.
