- 1 ripe avocado
- 4 oz sharp cheddar cheese, shredded
- 4 slices whole grain bread
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Prepare the avocado: Slice open the avocado, scoop into a bowl, and mash gently until creamy yet chunky.
- Butter the bread: Spread unsalted butter on one side of each slice of bread.
- Assemble: Place one slice of buttered bread on a skillet over medium heat. Layer with half the cheddar cheese, followed by mashed avocado, then top with remaining cheese and another slice of bread butter-side up.
- Grill: Cook for 3-4 minutes until golden brown, then flip carefully and grill the other side for another 3-4 minutes until crispy and cheese is melted.
- Serve: Let cool slightly before slicing diagonally. Enjoy warm!
