Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan with nonstick spray.
- In a bowl, mix graham cracker crumbs with melted butter until moistened. Press the mixture firmly into the bottom of the prepared pan.
- Bake the crust for about 10 minutes until lightly golden. Let it cool while preparing the filling.
- In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until incorporated.
- Blend in sour cream and vanilla extract. Add eggs one at a time, mixing gently after each addition.
- Fold in cookie dough chunks into the cheesecake batter.
- Pour the filling over the cooled crust and spread evenly. Bake for 55-60 minutes until set around edges but slightly jiggly in center.
- Cool completely before refrigerating for at least four hours or overnight before serving.
