Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, cinnamon, and a pinch of salt.
- In another bowl, combine pumpkin puree, grated apple, melted butter, eggs, and brown sugar until smooth.
- Gently fold the dry ingredients into the wet mixture until just combined—lumps are okay!
- For the streusel topping, mix oats with some flour and melted butter until crumbly.
- Spoon the batter into muffin cups until two-thirds full; sprinkle streusel on top.
- Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
