- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 1/2 cup brown sugar (packed)
- 2 tsp baking powder
- 3 large eggs (room temperature)
- 2 tsp vanilla extract
- 1/2 cup heavy cream
- 1 cup toffee bits
- 1/4 tsp sea salt
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (3-5 minutes).
- Add eggs one at a time, mixing in the vanilla until smooth.
- In another bowl, whisk together flour, baking powder, brown sugar, and sea salt. Gradually mix dry ingredients into wet ingredients until just combined.
- Fold in half of the toffee bits.
- Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- While cakes cool, prepare caramel sauce by melting granulated sugar over low heat until amber-colored. Gradually whisk in heavy cream, stirring until smooth; then add butter and sea salt.
- Assemble the cake by layering with caramel sauce and remaining toffee bits.
