Instructions
- Preheat oven to 350°F (175°C). Place the crust in a pie dish.
- Melt bittersweet chocolate in a heatproof bowl over simmering water; let cool slightly.
- In a chilled bowl, whip heavy cream with sugar and vanilla until soft peaks form.
- Soften gelatin in cold water; mix into cooled chocolate for a silky texture.
- Gently fold whipped cream into the chocolate mixture until combined.
- Fold in fresh cherries carefully, then pour filling into the crust.
- Refrigerate for at least four hours or overnight before serving.
