- 24 ladyfingers
- 1 cup freshly brewed espresso (cooled)
- 1 cup full-fat coconut cream
- 1 cup mascarpone cheese
- 2 tbsp dark rum
- 1/2 cup granulated sugar
- 2 tbsp unsweetened cocoa powder
Instructions
- Brew espresso and let it cool; mix in dark rum.
- In a bowl, combine coconut cream, mascarpone cheese, and sugar until smooth.
- Quickly dip each ladyfinger into the espresso mixture and layer them in a serving dish.
- Spread half of the coconut mixture over the ladyfingers; repeat with another layer of dipped ladyfingers and remaining cream.
- Dust cocoa powder generously on top.
- Cover and refrigerate for at least 4 hours or overnight before serving.
