- 1 lb baby potatoes, halved
- 1 cup bell peppers, chopped (mix of colors)
- 3 tbsp extra virgin olive oil
- 2 tsp dried oregano
- 3 garlic cloves, minced
- ½ cup crumbled feta cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Drizzle olive oil in a baking dish.
- In a large bowl, toss baby potatoes and bell peppers with olive oil, oregano, minced garlic, salt, and pepper until evenly coated.
- Spread the mixture in the baking dish and roast for 30-35 minutes, tossing halfway through.
- In the last 5 minutes of roasting, sprinkle crumbled feta on top until slightly melted.
- Serve immediately and enjoy the applause.
