Instructions

  1. Preheat oven to 425°F (220°C). Drizzle olive oil in a baking dish.
  2. In a large bowl, toss baby potatoes and bell peppers with olive oil, oregano, minced garlic, salt, and pepper until evenly coated.
  3. Spread the mixture in the baking dish and roast for 30-35 minutes, tossing halfway through.
  4. In the last 5 minutes of roasting, sprinkle crumbled feta on top until slightly melted.
