Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8×8 baking dish.
- In a large bowl, combine rolled oats, baking powder, cinnamon, and nuts.
- In another bowl, whisk together grated carrots, milk, eggs, and maple syrup.
- Pour the wet mixture over the dry ingredients and fold until just combined.
- Transfer to the baking dish and smooth out the top.
- Bake for 30-35 minutes until golden brown and fragrant.
- Allow to cool slightly before serving; drizzle with additional maple syrup if desired.
