- 4 boneless, skinless chicken breasts
- 2 medium fresh zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 medium red onion, diced
- 4 garlic cloves, minced
- 2 tsp Italian herbs (oregano, basil, thyme)
- 3 tbsp extra virgin olive oil
- 1 cup shredded mozzarella cheese
- ¼ cup toasted pine nuts (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Spray a 9×13-inch baking dish with nonstick cooking spray.
- Place the chicken breasts in the dish and drizzle with olive oil; season with salt, pepper, and half of the Italian herbs.
- Layer sliced zucchini, halved cherry tomatoes, diced red onion, and minced garlic over the chicken.
- Toss gently to combine flavors evenly.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil, sprinkle cheese and pine nuts on top if using, then bake uncovered for another 15-20 minutes until golden brown.
