  • 1 cup cherry tomatoes, halved

  • 4 garlic cloves, minced
  • 2 tsp Italian herbs (oregano, basil, thyme)
  • 3 tbsp extra virgin olive oil
  • 1 cup shredded mozzarella cheese
  • ¼ cup toasted pine nuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a 9×13-inch baking dish with nonstick cooking spray.
  3. Place the chicken breasts in the dish and drizzle with olive oil; season with salt, pepper, and half of the Italian herbs.
  4. Layer sliced zucchini, halved cherry tomatoes, diced red onion, and minced garlic over the chicken.
  5. Toss gently to combine flavors evenly.
  6. Cover with aluminum foil and bake for 25 minutes.
  7. Remove the foil, sprinkle cheese and pine nuts on top if using, then bake uncovered for another 15-20 minutes until golden brown.
