- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1/2 cup fresh lemon juice
- 1/4 cup fresh orange juice
- Zest of 1 lemon
- Zest of 1 orange
- 3 tbsp extra virgin olive oil
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 tsp fresh rosemary (or 1 tsp dried)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix lemon juice, orange juice, zests, garlic, olive oil, thyme, rosemary, salt, and pepper.
- Place chicken in a zip-lock bag or bowl; pour marinade over the chicken and ensure complete coating. Marinate for at least 30 minutes.
- Transfer marinated chicken to a greased baking dish and pour any remaining marinade on top.
- Roast in the oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C). Let it rest for 5-10 minutes before slicing.
