- 2 packs ramen noodles
- 1/2 cup creamy peanut butter
- 1/4 cup low-sodium soy sauce
- 2 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 2 green onions, sliced
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
Instructions
- Boil the noodles in a large pot of water according to package instructions until tender but slightly firm.
- In a skillet over medium heat, add oil and sauté minced garlic until fragrant. Toss in chopped vegetables and cook until softened.
- In a bowl, mix peanut butter, soy sauce, and vegetable broth until smooth. Add to the skillet with sautéed vegetables.
- Drain the cooked noodles and add them to the skillet. Gently fold the noodles into the sauce until well-coated.
- Serve immediately with sliced green onions on top.
