- 14 oz firm tofu, pressed and cubed
- 1 cup fresh pineapple, chopped
- 1 cup bell peppers (mixed red and green), sliced
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1 tsp sesame oil
- 2 tbsp cornstarch
- 2 tbsp vegetable oil (for sautéing)
Instructions
- Press the tofu to remove excess moisture, then cut into bite-sized cubes.
- Whisk together soy sauce, brown sugar, garlic, ginger, and sesame oil in a bowl to create the teriyaki sauce.
- Toss tofu cubes in cornstarch until evenly coated.
- Heat vegetable oil in a non-stick skillet over medium heat. Add tofu and sauté until golden brown on all sides (about 10 minutes).
- Stir in bell peppers and pineapple; pour teriyaki sauce over the mixture.
- Simmer on low heat for 5-7 minutes until the sauce thickens.
