Instructions
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a bowl, combine chopped pistachios and shredded coconut.
- In a mixer, whip egg whites until soft peaks form, then gradually add sugar until glossy peaks develop.
- Gently fold the coconut-pistachio mix into whipped egg whites using a spatula.
- Drop heaping tablespoons onto the baking sheet and bake for 20-25 minutes or until golden brown.
