Instructions

  2. In a saucepan, combine milk, sugar, lemon zest, and cinnamon stick over medium heat until just simmering. Remove from heat and cool slightly.
  3. In a bowl, whisk egg yolks and vanilla extract until smooth. Gradually mix in the warm milk mixture while whisking continuously.
  4. Fill each pastry-lined cup with custard until nearly full without overfilling.
  5. Bake for 15-20 minutes until tops are golden brown and slightly puffed.
  6. Allow to cool slightly before serving warm or at room temperature.
