Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, beat together softened butter, granulated sugar, brown sugar, and honey until creamy (about 3 minutes).
- Gradually add flour, baking soda, and salt; mix until just combined to avoid overmixing.
- Fold in chopped pistachios and vanilla extract until evenly distributed.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden while centers remain soft.
- Allow to cool on the sheets for 5 minutes before transferring to wire racks.
