Instructions
- Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- In a large bowl, whisk together cornmeal, flour, baking powder, sugar, and salt.
- Gradually add milk and melted butter while mixing gently. Then incorporate eggs one at a time until smooth.
- Drizzle honey into the batter and mix until just combined.
- Fill each muffin cup two-thirds full with batter.
- Bake for 15-20 minutes until golden brown; check with a toothpick for doneness.
- Let cool slightly before serving warm.
