- 4 large russet potatoes
- 1 pound sirloin steak

Instructions
- Preheat your oven to 400°F (200°C). Wash and dry the russet potatoes thoroughly.
- Poke holes in each potato using a fork. Rub olive oil over them and sprinkle with salt.
- Bake the potatoes directly on the oven rack for 45-60 minutes until fork-tender.
- While baking, cut the sirloin steak into bite-sized pieces, season with salt and pepper, and cook in a skillet on medium-high heat for about 4-6 minutes until browned.
- Once potatoes are done, cut them open lengthwise, fluff the insides with a fork, and top with steak bites, cheddar cheese, sour cream, chives, and bacon bits.
