Instructions
- Slice the beef tenderloin against the grain into thin strips; prepare mushrooms, onion, and garlic.
- In a large skillet over medium heat, melt butter and sauté onions until translucent (3-4 minutes). Add garlic and cook for an additional minute.
- Increase heat to medium-high, add beef strips, cooking until browned on all sides (4-5 minutes). Remove from skillet.
- Stir in mushrooms and cook until softened (about 5 minutes). Pour in beef broth and simmer for 5 minutes.
- Reduce heat to medium-low; stir in sour cream and Dijon mustard until fully combined. Simmer gently for another 2-3 minutes.
- Serve hot over egg noodles or rice, garnished with fresh parsley if desired.
