- 3–4 boneless, skinless chicken breasts (1 pound)
- 1 cup long-grain brown rice
- 2 cups water
- 2 cups fresh broccoli florets
- 3 garlic cloves (minced)
- ¼ cup low-sodium soy sauce
- 2 tbsp honey
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
- Prep the broccoli by washing and cutting it into bite-sized florets. Mince the garlic.
- In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of brown rice and a pinch of salt; reduce heat to low, cover, and simmer for about 45 minutes.
- Heat olive oil in a large skillet over medium heat. Season diced chicken with salt and pepper; cook for 6-8 minutes until golden and cooked through.
- Stir in minced garlic for about 30 seconds until fragrant, then add soy sauce and honey; mix well.
- Fold in the broccoli florets and cooked rice; steam together for an additional 5 minutes until bright green.
- Serve hot, garnished as desired.
