- 1 lb lean ground turkey
- 2 medium zucchinis, sliced into half-moons
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 bell pepper (any color), diced
- 1 can (14.5 oz) diced tomatoes
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp oregano
- 2 tbsp extra virgin olive oil
- Salt & pepper to taste
Instructions
- Prepare your vegetables: wash and dice the onion and bell pepper; slice the zucchini; mince the garlic.
- Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté until softened (about 5 minutes).
- Increase heat slightly, add ground turkey, and cook until browned (approximately 7 minutes), breaking it apart as it cooks.
- Stir in zucchini and garlic; sauté until zucchini is tender but still crisp (about 4-5 minutes).
- Add diced tomatoes, cumin, paprika, oregano, salt, and pepper. Mix well and let simmer for an additional 5 minutes.
- Serve hot, garnished with fresh herbs if desired.
